Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
In a large mixing bowl, mash the ripe bananas until smooth. Add the vegetable oil, maple syrup, vanilla extract, and apple cider vinegar. Mix well until fully combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using). Make sure everything is evenly distributed.
Gradually add the dry ingredients to the wet mixture, stirring gently until combined. Be careful not to overmix, as this can make the bread dense.
If you’re adding nuts or chocolate chips, gently fold them into the batter at this stage.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Baking time may vary depending on your oven, so check after 50 minutes and adjust if needed.
Once baked, allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
