Vegan Berry Cobbler – A Warm, Fruity & Comforting Dessert!

🍓 4 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
🍯 ¼ cup maple syrup or coconut sugar (adjust based on berry sweetness)
🍋 1 tablespoon lemon juice
🥄 1 teaspoon vanilla extract
🥄 1 tablespoon cornstarch or arrowroot powder (to thicken)

For the Cobbler Topping:

🌾 1 cup all-purpose flour (or gluten-free blend)
🥄 ¼ cup coconut sugar or brown sugar
🛢 1 teaspoon baking powder
🧂 ¼ teaspoon salt
🥛 ½ cup coconut milk or almond milk
🥥 2 tablespoons coconut oil or vegan butter (melted)
🥄 1 teaspoon vanilla extract


2. Instructions

📌 1. Preheat & Prepare

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9-inch baking dish with coconut oil.

📌 2. Make the Berry Filling

  • In a bowl, toss berries, maple syrup, lemon juice, vanilla, and cornstarch.
  • Mix well and spread evenly in the baking dish.

📌 3. Make the Cobbler Topping

  • In a separate bowl, whisk together flour, sugar, baking powder, and salt.
  • Stir in coconut milk, melted coconut oil, and vanilla until just combined.
  • Drop spoonfuls of batter over the berries (it doesn’t have to be perfect!).

📌 4. Bake Until Golden

  • Bake for 25-30 minutes, or until the topping is golden brown and the berry filling is bubbling.
  • Let it cool for 5-10 minutes before serving.
