1. Prepare the Cauliflower:
Cut the cauliflower into florets and steam or microwave until tender, about 5–7 minutes.
Let the cauliflower cool slightly, then transfer it to a clean kitchen towel. Squeeze out as much water as possible to prevent soggy tots.
Finely chop or pulse the cauliflower in a food processor until it resembles rice.
2. Make the Mixture:
In a large bowl, combine the cauliflower, breadcrumbs, nutritional yeast, flax egg, garlic powder, onion powder, smoked paprika, salt, and pepper.
Mix until the ingredients come together into a dough-like consistency. If the mixture feels too wet, add a bit more breadcrumbs.
3. Shape the Tater Tots:
Take small portions of the mixture (about 1 tablespoon) and shape them into small, cylindrical « tot » shapes.
Place the shaped tots on a parchment-lined baking sheet.
