Vegan Lentil Walnut Tacos – A Flavorful & Protein-Packed Meal!

🌮 Small corn or flour tortillas
🥑 Sliced avocado or guacamole
🌱 Chopped fresh cilantro
🥬 Shredded lettuce or cabbage
🌶 Salsa or pico de gallo
🍋 Lime wedges for squeezing


Instructions

1. Cook the Lentil Walnut Taco Filling

1️⃣ Heat olive oil in a pan over medium heat.
2️⃣ Add onion and garlic, sauté for 2-3 minutes until softened.
3️⃣ Stir in walnuts, lentils, cumin, paprika, chili powder, salt, and pepper.
4️⃣ Add tomato paste and vegetable broth, stir well and cook for 5-7 minutes, until slightly thickened.
5️⃣ Remove from heat and let sit for a couple of minutes to absorb flavors.


2. Warm the Tortillas 🌮
