🛢 1 tablespoon olive oil or vegan butter
🧅 1 small onion (finely chopped)
🥕 1 carrot (chopped)
🌿 2 celery stalks (chopped)
🧄 3 cloves garlic (minced)
🍄 2 cups mushrooms (sliced, cremini or shiitake work best!)
🌿 ½ teaspoon dried thyme
🥄 ½ teaspoon dried rosemary (or oregano)
🍚 ¾ cup wild rice (rinsed & drained)
🥣 4 cups vegetable broth
🥛 1 cup unsweetened plant-based milk (oat, almond, or coconut for creaminess)
🥄 2 tablespoons nutritional yeast (for a cheesy flavor, optional)
🧂 Salt & black pepper to taste
🍋 Juice of ½ lemon (for brightness, optional)
🌿 Fresh parsley (for garnish, optional)
