Vegan Quiche Recipe
This vegan quiche is a savory, egg-free version of the classic dish. Made with a creamy tofu base and packed with vegetables, it’s perfect for breakfast, brunch, or a light dinner.
Ingredients:
For the Crust:
- 1 1/2 cups (190 g) all-purpose flour (or gluten-free flour blend)
- 1/2 teaspoon salt
- 1/2 cup (120 g) vegan butter or coconut oil, cold
- 2–4 tablespoons cold water
For the Filling:
- 1 block (350 g) firm tofu, drained
- 1/4 cup (60 ml) unsweetened plant-based milk
- 2 tablespoons nutritional yeast
- 1 tablespoon cornstarch or arrowroot powder
- 1 teaspoon turmeric (for color)
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika (optional)
- Salt and black pepper to taste
Vegetable Mix:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 cup spinach, chopped
- 1/2 cup mushrooms, sliced
- 1/2 cup bell pepper, diced
- Optional: 1/4 cup sun-dried tomatoes, chopped
