Vegan Quiche Recipe

This vegan quiche is a savory, egg-free version of the classic dish. Made with a creamy tofu base and packed with vegetables, it’s perfect for breakfast, brunch, or a light dinner.


Ingredients:

For the Crust:

  • 1 1/2 cups (190 g) all-purpose flour (or gluten-free flour blend)
  • 1/2 teaspoon salt
  • 1/2 cup (120 g) vegan butter or coconut oil, cold
  • 2–4 tablespoons cold water

For the Filling:

  • 1 block (350 g) firm tofu, drained
  • 1/4 cup (60 ml) unsweetened plant-based milk
  • 2 tablespoons nutritional yeast
  • 1 tablespoon cornstarch or arrowroot powder
  • 1 teaspoon turmeric (for color)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste

Vegetable Mix:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 cup spinach, chopped
  • 1/2 cup mushrooms, sliced
  • 1/2 cup bell pepper, diced
  • Optional: 1/4 cup sun-dried tomatoes, chopped
